About Biànca

Biànca was born out of a desire to bring the spirit of Italian dining to Brisbane’s Fortitude Valley, capturing the effervescence of a classic trattoria within a sleek, warm, and colourful setting. The food focuses on perfecting classic Italian dishes, made in-house with fresh, seasonal produce. The beverage program is thoughtful and balanced, featuring Italian-leaning wines and seasonal cocktails that complement the food and the vibrant atmosphere.

The Role

We are currently hiring a Head Sommelier for Biànca, this is a full-time leadership role suited to a Sommelier who enjoys guiding a team, managing a wine program, and contributing to a thoughtful and well-executed beverage experience within a venue. Working closely with the General Manager and Area Sommelier, you will be responsible for list curation, training and mentoring team members, and driving wine service that is thoughtful, guest-focused, and aligned with the venue’s unique identity.

• Proven experience managing a wine program and leading a team in a premium dining environment
• Strong floor presence with the ability to guide and mentor others while delivering seamless wine service under pressure
• Ability to curate dynamic, concept-aligned wine lists and execute group beverage strategies
• Deep product knowledge and a commitment to ongoing industry learning
• Clear communication and strong leadership skills
• Full-time availability including evenings and weekends
• WSET Level 3 certification is required
